Amish Recipes

Onion Patties

Ingredients:

1 ½ cups flour

4 tsp Baking Powder

2 Tbsp sugar

1 tsp salt

2 Tbsp corn meal

1 ½ cup milk

5 cups onion, finely chopped

lard

1. Combine dry ingredients.

2. Add milk and mix well.

3. Stir in onions.

4. Drop batter in small mounds into hot lard.

5. Fry until golden brown on both sides, turning only once.

Makes approx 16 patties.

Cream of Onion Soup

Ingredients:

4 Tbsp butter

8 Tbsp flour

4 cups chicken stock

8 cups milk

8 Tbsp butter

2 cups onion, chopped

1/2 tsp salt

1/2 tsp pepper

1/2 cup parsley

8 Tbsp heavy cream

1. Melt 2 Tbsp butter. Add flour and stir until smooth

2. Add chicken stock, stirring constantly until smooth and thickened. (good time to use that stock)

3. Gradually add milk.

4. Continue stirring until mixture comes almost to a boiling point, then set soup aside.

5. In separate pan, saute onion in 8 Tbsp of butter.

6. When tender add seasonings and cream.

7. Simmer gently for 15 minutes

8. Add onion mixture to soup.

9. Heat but do not boil

Makes approx 12 servings

I have been finding the starter recipe for Amish friendship bread. I use to make it all the time off of a starter batch that was given to me years ago and have not been able to find any one since that would have this information. Is their anyone that may know this recipe?
